Yellow hedgehogs are “cousins ​​of the foxes” to taste and nutritional value. But mushroom pickers underestimate them, collect chanterelles, because they bear fruit at about the same time with the hedgehogs. These mushrooms are really magnificent to taste, and even easier than chanterelles in identification, they are simple to cook, do not require precooking or soaking.

The biggest difference between the chanterelles and the hedgehogs is that under the hat of yellow hedgehogs there are cloves-ships. This feature is inherent in the form.

Large and fleshy yellow hedges grow in all types of wet forests. The mushroom is distributed in Britain and Ireland, throughout continental Europe and Eurasia, many parts of North America.

As a rule, yellow hedgehogs are found in groups, form small and sometimes large fabulous “Witches” up to four meters across.

When and how harvest is harvested

This is a mycorrheal appearance that appears from year to year in the same places. Ezhoviks most like marshy lowlands with oaks, coniferous trees and blueberries.

Among deciduous plantings in the fall, it is a bit more difficult to find yellow hedgehogs, they hide under the leaves and branches, but stand out thanks to the color.

How to recognize and collect yellow hedgehogs

As a rule, when the mycelium meets an “obstacle”, such as a ditch or a dry zone on the border with a more humid site, it reacts to this barrier and tries to overcome it. Yellow hedgehogs grow abundantly in these places and spread fruit bodies on the border.

If you notice the white, massive clusters of mushrooms at a distance, the chances of finding hedgehogs are high. Where there are several, there will inevitably be a lot, they grow in groups. Finding, go carefully so as not to come and not break.

The appearance of the yellow hedgehog

The hat is creamy-white, with irregular wavy edges and holes on the upper surface, which the touch resembles a thin velvet and slightly blushes when pressed. The hard, crispy pulp of this large edible mushroom is slightly spicy and resembles the taste of the chanterelles (Canthallus cibarius). Irregularly shape of the cap is typical from 4 to 15 cm across.

The thorns on the bottom of the hat are soft, hang like stalactites, cover the entire surface of the fetus. Thorns from 2 to 6 mm and grow towards the leg.

The stem is white, cylindrical, from 5 to 10 cm in height and from 1.5 to 3 cm in diameter, hard. Disputes ellipsoidal, smooth. The spore print is white.

The smell/taste is “mushroom”, the mature fruit bites in the mouth if you hold raw pulp for a few seconds.


The yellow hedgehog is growing among the moss and fallen leaves on the forest litter from August to December.
